Today I have a tale of the magic that happens when your fridge is overflowing with forgotten veggies and a whisper of inspiration hits! That’s precisely how I stumbled upon this incredible, veggie-packed, creamy tahini pasta dish. My produce drawer was practically begging for attention, and I just knew this meal was going to be an adventure.
In true me fashion, you won’t find precise measurements here – unless you count “a pinch of this” and “a dash of that” as scientific units. This recipe was born purely out of intuition, a symphony of vibes, and a whole lot of tasting along the way.
And honestly?
I totally outdid myself. This was, without a doubt, DELISH.
The flavor? Think wonderfully nutty and earthy, with a surprising, delightful zing of lemon that keeps your taste buds on their toes. It’s a journey for your palate and your kitchen, and trust me, it’s a good one!
Without further ado lets get into it!
Recipe
Makes about 5 servings
Ingredients
- 1 pound of ground beef (I use grass fed 90/10%)
- 1 box of pasta (gluten free if desired/needed)
- 2 zucchinis chopped
- 12 oz broccoli
- ½ chopped white onion
- 2 cups greens ( I used spinach and arugula mix)
- Minced garlic
- Lemon juice
- About 1 cup tahini
- Garlic powder
- Salt
- Pepper
- Basil
- Parsley
Directions
- Fill a large pot with water and bring to a boil.
- Cook pasta according to directions on the package.
- With 3 mins until the pasta is ready add the broccoli to the pot, steaming until the pasta is finished.
- Remove the broccoli first and add to a blender, then strain the pasta.
- Add the beef to a large pan with some oil and seasonings (salt, pepper, basil, parsley, and minced garlic) to taste.
- Once browned, add the zucchinis and onion to the pan and cook on medium heat.
- After softening the veggies, add your greens to the pan to cook down. Reduce to low heat once the greens are wilted.
- Add a generous drizzle of olive oil to the blender and pulverize the broccoli.
- Then, add 1 cup of water and 1 cup of tahini and blend again.
- Check the consistency and add more water if desired.
- Lastly, add a generous amount of lemon juice, salt, and garlic powder to the mixture, this time mix by hand and adjust the additions to taste.
- Assemble your dish with a bed of pasta, a large scoop of beef and veggies, and a dollop of the sauce on top.
- Mix together and enjoy!
