
I have to give a big shoutout to TikTok for sparking the inspiration behind this week’s meal! While scrolling through for something fresh, simple, and satisfying, I stumbled upon a DIY turkey meatballs recipe that immediately caught my eye. I’m always on the lookout for meals that strike a balance between ease and flavor, and this one checked all the boxes.
These turkey meatballs came together quickly and yielded about 4–5 hearty servings (with a few extra meatballs to snack on or save for later 😉 ). What I love most about this dish is how refreshing yet filling it is. The flavors are bright, making it a perfect choice for hot summer days when you want something nourishing but not too heavy.
One of my favorite ways to elevate any meal is by playing with texture. I find that adding a crunchy element keeps each bite exciting and satisfying. In this recipe, crisp cucumber slices add that perfect contrast to the tender meatballs. Whether it’s fresh veggies in a bowl like this or tortilla chips in a smoky chipotle-inspired dish, that crunch factor makes all the difference.

Recipe:
- 2 lbs of ground turkey
- 1 red onion
- 1 cup of brown rice
- 1 cucumber
- 2 tomatoes
- Hummus
- Dill
- Lemon juice
- Garlic powder
- Oregano
- Parsley
- Salt
- Pepper
- Avocado oil
Directions:


- Preheat your oven to 400. Cook 1 cup of rice according to the directions on the package.
- To your ground turkey add in your seasonings, half the red onion, lemon juice and avocado oil mix well to combine.
- Roll up your meatballs to be of desired size (mine were about an inch and a half wide and place on a greased baking sheet.
- Cook for about 20 mins depending on size.
- While waiting for our rice and meatballs to cook, chop up the remaining onion, whole cucumber, and tomatoes into small pieces.
- Serve with a generous scoop of hummus or another sauce like tzatziki (if you aren’t dairy free like me, this would be a great addition!)
- When storing, store the chopped veggies separately from the rice and meatballs, we want it to stay fresh and crunchy and not be softened by reheating.
- When reheating, microwave one serving at a time of rice and meatballs, then add the veggies and hummus to serve and enjoy!
