
Apple cider donut mini muffins: just like the real thing!
Not to be dramatic, but making these muffins brought me such immense joy I cannot explain it.
The texture came out PERFECT.

Nice and squishy just like your favorite glutinous muffins and delightfully fall flavored. I used to be a sucker for apple cider donuts in the fall and I can surely say I’m going to be making these at least a few more times this fall to scratch the itch.
My only suggestion would be to add a little more apple cider and nutmeg than the recipe calls for. I am a fan of a stronger apple flavor and I think this touch would enhance that next time I make them!

Let’s get into the recipe:
Ingredients
For Donuts:
- 1/3 cup fresh apple cider
- 2 eggs
- 2 tablespoon maple syrup or honey
- 1/2 teaspoon vanilla extract
- 1 and a little more cup all purpose GF flour (I use king arthurs)
- 1 teaspoon cinnamon
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- Pinch ground nutmeg
- Pinch salt
For Sugar Coating:
- 2 tablespoon coconut oil, melted
- 1 tablespoon granulated sugar
- 1 tablespoon cinnamon
Instructions
- Preheat the oven to 350ºF and grease a mini muffin pan.
- Make the donut batter: Add cider, eggs, maple syrup and vanilla to a medium bowl and whisk together to combine. To the bowl, add the almond flour, coconut flour, cinnamon, baking soda, baking powder, nutmeg and salt. Whisk until the batter is fully combined with no lumps.
- Drop a tablespoon of batter into each hole
- Bake in a preheated oven for 12-15 minutes until a toothpick comes out clean. Remove the muffins from the pan and let them cool
- Meanwhile, place melted coconut oil in a shallow bowl. Place sugar and cinnamon in another shallow bowl and mix well.
- Dip donut holes into coconut oil followed by dipping them into the cinnamon sugar.
- Serve immediately or keep covered at room temperature.
