Healthy Bruschetta Chicken Bowls for Easy Meal Prep

After a little time away, I’m so excited to be back in the kitchen and sharing healthier, delicious recipes with you again! Life has been busy, but returning to cooking has reminded me how much I love simple meals that are both nourishing and satisfying. This Bruschetta Chicken Bowl is the perfect summer-inspired dish, featuring juicy tomatoes, fresh basil, crispy roasted potatoes, and seasoned chicken. It’s packed with flavor, easy to prepare, and ideal for meal prep throughout the week.

Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • Fresh basil
  • Balsamic vinegar 
  • Balsamic glaze for topping
  • Baby yukon yellow potatoes
  • 2-3 roma tomatoes 
  • Avocado oil for cooking 
  • Olive oil for bruschetta topping
  • 3 clove garlic
  • Salt and pepper to taste
  • Italian seasoning
  • Garlic powder

Directions:  Makes about 4 servings

  1. Season chicken with garlic powder, italian seasoning, salt, and pepper. 
  2. Cook in a large pan on medium heat and let rest on a cutting board for 5 minutes before slicing 
  3. Preheat the oven to 400. Halve the potatoes, toss in avocado oil, season as desired. 
  4. Place face down on the cooking tray to crispen. Cook for about 25 minutes until golden on the flat side.
  5. Dice the tomatoes while the potatoes are cooking, combine with balsamic vinegar, olive oil, ⅓ cup fresh chopped basil, garlic, and salt and pepper. 
  6. Slice the chicken and assemble bowls with a generous amount of potatoes and bruschetta topping on each. (optional add balsamic glaze on top and dairy free mozzarella!)

If meal prepping these I recommend storing the bruschetta topping separately than the chicken and potatoes. This keeps the tomatoes fresh and prevents them from becoming soggy when reheating the rest of the meal.

There’s nothing better than taking advantage of fresh summer produce, and this recipe does exactly that. The fresh bruschetta topping adds so much flavor and keeps these bowls tasting vibrant all week long. Here’s to making healthy eating a little easier and a lot more delicious.
