When you’re sick you don’t want to be standing for a long time chopping veggies, you just want to toss everything in the pot and wait. This eliminated any kind of chopping and all I had to do was hand shred a rotisserie chicken and toss everything into my pot when it was time!

Chicken Soup
- 1 Tbsp of olive oil
- 16 oz of mirepoix (or minced carrots onions and celery)
- 2 cloves garlic, minced
- 2 tbsp minced ginger
- 8 cups chicken broth
- ½ tsp black pepper
- 1 tbsp fresh thyme, finely diced
- 1 tsp turmeric
- 1 tsp sea salt
- 12 oz gluten free pasta
- 3 cups cooked shredded chicken or rotisserie
Instructions:
- Heat the olive oil over medium high heat.
- Add in the carrots, onions, and celery. Saute for 3-5 minutes. Add in the garlic and ginger and saute for 30 seconds longer until fragrant. Add in the broth and seasonings. Simmer for 15 minutes. Add in the pasta and cooked shredded chicken and simmer until the pasta is al dente. Taste test, then add in salt and pepper as needed.
When I was feeling under the weather, this chicken soup was exactly what I needed: hearty, nourishing, and comforting from the first spoonful to the last.
