Get ready for a lunchtime upgrade that’s both speedy and seriously satisfying! This week, I’m bringing you vibrant, taco-inspired meal prep bowls that are not only packed with flavor and minimal fuss but are also naturally dairy-free and easily made gluten-free (just be sure to use gluten-free taco seasoning!). Think bright colors, delicious spices, and a meal whipped up with whatever goodness I could find lurking in the fridge. You know I’m a sucker for eating the rainbow, and trust me, these colorful bowls are a feast for the eyes (and your tastebuds!). Plus, everything’s organic when possible, because we’re fueling our bodies right!
DISCLAIMER:I am not good with measuring. I just do a generous amount of seasonings, apologies to those who like perfect measurements!
Ingredients
1 lb ground grass fed 93/7 beef
1 zucchini
1 yellow bell pepper
½ cup chopped onion
Avocado oil (for the pan)
1 cup wild rice (rice of choice)
Hot sauce of choice (I used Cholula)
Paprika
Garlic powder
Salt
Cilantro, chopped or dried (depending on what you have in stock)
¼ cup lime juice
1 taco seasoning packet (make sure it’s gluten free)
Directions
- Prepare 1 cup rice according to the directions on the bag
- Once the water is boiling I add the lime juice and lots of cilantro to the pot to allow the rice of absorb those flavors while cooking
- Meanwhile, heat up a pan to medium heat with some avocado oil and add the pound of ground beef. Break it up into small pieces and cook until mostly browned.
- Chop up the veggies into cubes during this time
- Add the seasoning packet and desired amount of hot sauce, continue until the beef is fully brown and cooked through.
- Prepare your 4-5 containers to be filled. Add the beef to the container, filling about one third.
- Keep the pan warm and add a little bit more avocado oil. Add the veggies to the pan with seasonings of choice, I used paprika, garlic powder, and salt in generous amounts.
- Cook to desired tenderness (I like them slightly browned) then add to the containers in the middle third.
- Once the rice is finished, add it to the remaining third of the containers.
I’m already dreaming about how much better these bowls would be with a sprinkle of crushed-up tortilla chips on top right before serving! That little bit of crunch would be the perfect contrast to the tender beef and veggies. Consider it your secret weapon for ultimate taco bowl satisfaction.
